For the sauerkraut casserole, fry bacon and onion, add sugar and brown. Add vinegar and cabbage and cook until soft.

Grease the casserole dish and sprinkle with breadcrumbs. Alternate layers of sliced potatoes, chopped smoked meat and sauerkraut. Whisk sour cream with egg and pour over the casserole.

Bake the sauerkraut casserole in the oven for about 30 minutes.
