Cut the rolls in half and over a baking dish, shave off the crust. Keep the bread crumbs. Put the grated breadcrumbs in a suitable bowl. Mix the milk with the vanilla sugar, 2 eggs and the salt, pour it over the breadcrumbs and let them steep in it until they are completely soaked.

Mix the 3rd egg with 2 tablespoons of water. Lightly squeeze the buns, turn them to the other side in the beaten egg and then in the grated breadcrumbs.

Heat the fat and fry the dumplings on all sides until golden brown. Arrange the dumplings and sprinkle with powdered sugar.

Serve with: Wine cream sauce, vanilla sauce or possibly a compote.
