For the summer couscous salad, first put the couscous in a large bowl and pour the hot water and a few drops of oil. Stir briefly and let stand, covered.

In the meantime, wash and clean the zucchini, bell bell pepper and apple and cut them into bite-sized pieces.

Sauté the vegetables and apple with a little oil in a pan for a short time, but not too long, so that they do not become too soft.

Now add spices and fresh herbs to the coucous, which should already be done. Thoroughly wash and shred the arugula and set aside briefly.

Mix the couscous with the roasted vegetables & fruit. Now add the arugula to the couscous salad, season again and enjoy right away!
