For the croissants with minced meat, cook the macaroni according to package directions in sufficient salted water until al dente. Clean and chop the vegetables.

Heat the olive oil in a pan and fry the minced meat until golden brown. Season with pepper and salt, also add the Italian herbs. Add the finely chopped vegetables and bake for about 5 minutes.

Add the tomato cubes with juice and about 100 ml of pasta water, put the lid on and cook for about 10 minutes. Drain the macaroni, drain well and then add to the mince.

Add the grated cheese as well, stir well until it is dissolved. Arrange the croissants with mince on deep warmed plates and garnish with parsley.
