For the Popcorn Couscous Salad with Mango, first heat the oil in a saucepan or deep skillet over medium heat. Add the corn kernels and spread them on the bottom of the pot. Place the lid tightly on the pot. Wait until the first kernels pop. Shake the pot regularly. After about 2 minutes, remove the pot from the heat and wait until the last kernels have popped. Allow popcorn to cool.

Place couscous in a heatproof bowl and pour boiling water over it. Let swell, loosen with a fork when cool. Pour hot water over raisins and soak for 10 minutes.

Clean leek, cut into rings and put in a bowl with the couscous. Dice the mango pulp and add. Core the peppers, remove the dividers, then wash and cut into fine strips. Drain the raisins and add them to the salad bowl as well.

For the dressing, mix oil and lime juice, season, then pour over salad and mix with popcorn. Serve popcorn couscous salad with mango.
