Instructions:

Put the olive oil in a frying pan and heat. Sear the seasoned monkfish fillet on all sides. Then add the kitchen herbs and the crushed garlic clove and cook in the oven at 160 to 180 °C convection oven for about 10 minutes, otherwise depending on the thickness of the monkfish fillet. The core of the fillet should still be slightly glazed. Then cut the fillet into finger-thick slices and place on the ratatouille couscous and garnish with sauce.

Put butter in a saucepan and melt, then add shallots and sauté until colorless. Now add the diced peppers and sauté them colorlessly as well.
