Veal Chops with Cream Sauerkraut

For the cabbage, blanch (scald) tomatoes, skin, quarter, seed and cut into rough cubes. Peel and finely dice the onion.

Sauté onion in hot butter, add sauerkraut. Add whipping cream and wine. Simmer over medium heat for about 25 minutes, until the liquid has almost boiled away. Season with sugar and salt, fold in tomatoes. 3.

In the meantime, for the dumplings, soak the bread in warm water. Peel and finely dice the onion and sauté in hot oil until soft. Knead the minced meat with the squeezed out bread, onion, chopped capers and the egg. Season with pepper, mustard, salt, paprika powder and maybe a little bit of caper juice. Form 16 small balls. Fry in a frying pan in hot fat for about 8 minutes until brown all over.

Serve with creamed sauerkraut.

Additional dish: Mashed potatoes with nut butter

For the nut butter, melt 4 tbsp butter in a saucepan over medium heat and add 1 tbsp hazelnut flakes. Drizzle the nut butter over the puree.
