For the carfioli loaves, divide the carfioli into smaller pieces, wash and then boil in salted water (not too soft). Let cool briefly and then mash.

Finely chop the onion and mix with the remaining ingredients with the mashed cauliflower, season with salt, pepper and nutmeg. Shape the cauliflower and fry in oil until golden brown.
