For Marinated Zucchini and Melanzani Wash zucchini, melanzani, pepperoni and bell bell pepper.

Cut bell bell pepper in half and pit. Cut zucchini and melanzani into slices about 2 cm thick, bell pepper into cubes, pepperoni into fine rings. Season the vegetables with salt and pepper.

Heat olive oil in a pan and sauté the vegetables in it. Briefly sauté the ginger and thyme and place in the oven preheated to 220 °C for 5 minutes.

For the vinaigrette, mix the finely chopped dried tomatoes with the remaining ingredients to make a strong marinade. Marinate the lukewarm vegetables with it.

Let the marinated melanzane and zucchini marinate for a few hours and serve cold.
