Slit the vanilla beans lengthwise and scrape out the pulp. Bring the pods and vanilla pulp to the boil with a pinch of salt, milk and whipping cream. Now remove the pods. Beat the egg yolks and sugar, add the hot milk-whipped cream mixture. Return everything to the saucepan and whip, stirring throughout. If you don’t have a routine, make this in a water bath. Whisk the custard until cooled or serve lukewarm with desserts.
