For the vanilla paste, scrape out the pulp of the vanilla pods, cut the pods into coarse pieces. Heat the sugar with the vanilla pulp, the pods and the water in a pot.

Simmer until everything has reduced to a syrupy consistency. Pour into hot rinsed screw jars (if you like, with the pods – they still give off their flavor) and seal well.

Turn upside down briefly. Will keep for a few weeks. Once opened, store in the refrigerator. Depending on how thick you boil down the paste will fall about 300-400 g as a result.
