For the fried potato chips, wash the potatoes well and rub them dry. Then, using a slicer, or a vegetable slicer, slice potatoes with peel lengthwise into thin, even slices.

Rinse the slices under running water in a colander until the water appears clear, pat dry and fry in hot oil until crisp.

Let the chips dry out completely on paper towels and then salt them.

Season fried potato chips with herbs if desired and serve.
