For the vegetable bacon patties, bring plenty of salted water to a boil in a large pot. Put in the speckles and cook until al dente. Blanch the tomatoes, remove skin and stalk, chop coarsely.

Slice the zucchini and onion. Core the bell bell pepper and cut into strips. Heat olive oil in a large frying pan, sauté tomatoes, add zucchini, onion and bell bell pepper and sauté as well. Season with salt and pepper and drizzle with the balsamic vinegar.

Cut the arugula into strips and mix in with the cooked, strained felckerln. Slowly fry the bacon cut into cubes in a separate pan (without oil) and also mix in with the felckers.

Taste again and season as desired. Arrange in deep plates and serve the vegetable and bacon fritters with sliced Emmentaler.
