For the Baden sausage salad, first skin the meat sausage. Remove the skin from the cucumber, onions and apple. Remove the skin from the tomatoes. Cut everything into tender strips. Do the same with the carrots. Peel the eggs. Reserve two eighths for garnish. Separate egg whites from yolks. Finely chop egg whites. Mix well with remaining ingredients.
Press egg yolks through a sieve. Stir through mayonnaise, whipped cream and spices. Pour over sausage salad and mix. Finely chop the chives and add. Allow to infuse well.
Season the Baden sausage salad again before serving. Garnish with two egg quarters and parsley.
