A bean recipe for every taste:

Rinse mutton chops under running cold water, dry and place in buttermilk for about 24 hours. Repeatedly rinse the meat under cold running water, dry it and remove the skin and almost all fat (only a thin layer of fat should remain on the meat). Rub the meat with salt, pepper and thyme.

Put the beans with salt and savory in the watered clay pot, put the meat on it, close the clay pot with the lid, put it on the roasting rack in the oven.

Place the pot on the roasting rack in the oven and cook for about 1 3/4 hours at 200-225 degrees.

Remove the cooked meat from the bones, cut into slices, arrange with the beans on a heated plate and keep warm.

If you like, thicken the bean-beef soup with a little wheat flour (mixed with cold water), fold in canned milk or whipped cream and season the sauce with salt.
