Clean the mushrooms dry, rinse in lemon water, rub dry, and chop finely. Heat the butter and sauté the chopped onion until golden. Add the mushrooms and sauté. Add the kitchen herbs and set the mixture aside to cool.

Finely dice the ham.

Mix the cream, the mushroom mixture and the ham into the sausage meat. Butter the ramekins and put the sausage meat in them. Place in the oven heated to 180 °C and bake for 30 minutes. Turn out onto plates. Serve with pastry and leaf salad.
