Instructions:

For the Wachau pancakes first prepare the dough.

For the dough, make a smooth dough with milk, flour, sugar and a pinch of salt. Bake out with oil or butter.

For the filling, mix milk with 2 yolks and pudding powder and bring to a boil, stirring constantly. Add butter and stir custard until cold.

Cream 100 g butter with 100 g sugar, stir in bitter almond flavoring, and the cooled custard by the spoonful.

For the sauce, heat the sugar in a saucepan and caramelize. Deglaze with the white wine (save 1 tbsp and mix with cornflour) and bring to the boil.

Mix 1 tbsp white wine with the cornflour until smooth and thicken the sauce with it. Add the seedless grapes and bring to the boil.

Fill the pancakes with the cream, roll them up and pour the warm sauce over them.

Sprinkle the Wachau pancakes with sliced almonds and serve.
