For the curd cheese pancakes, first prepare the curd butter dough. For the curd butter dough, place flour on a board, cut in butter and crumble with the flour and salt.

Add the curd and quickly knead into a smooth dough. Let the dough rest in a cool place for at least 1/2 hour.

For the filling, mix curd, sugar, vanilla sugar and yolks until smooth. Roll out the curd butter dough to a thickness of 3 mm. Roll out squares of 10×10 cm and place curd filling in the center.

Place the drained sour cherries or cherries on top. Now fold the opposite corners towards the center and fix them with almond sticks.

Brush with egg and bake in a preheated oven at 200 degrees.
