For the curd dough with wholemeal flour, pour out the flour into a mound on the work surface and sprinkle with salt, pepper and nutmeg.

Press a hollow in the middle of the mound and fill it with curd cheese, yolk and butter cubes.

Quickly knead all the ingredients into a dough, wrap in cling film and place in the refrigerator for at least 30 minutes.
