Meanwhile, soak the en and dice the flesh of the melon or peel out balls. Remove the peel from the oranges and cut them into eighths.

Pull the fish fillets out of the buttermilk and pour it away. Cut the matie fillets into strips and divide them into the above mentioned portions, put them on deep plates.

For the dressing:

Pour the liquid over the matie portions. Garnish with shrimp and lemon balm.

Remove en, drain and sprinkle on top of the matie cocktail last.

Serving: Long grain rice or bread, if desired.

Tip: Always use organic lemons for cooking, if possible!
