For the semolina dumplings, bring the milk to the boil and stir in the semolina. When the semolina mixture solidifies, remove from heat and let cool slightly.

Add the egg, salt and finely chopped chives and mix well (preferably with your hands). Form about 30 small dumplings with wet hands.

Bring lightly salted water or soup to a boil and put the dumplings in. Let the semolina dumplings steep for 20 minutes until lightly boiling.
