For the egg barley soup, dice the bacon. Peel and finely chop the onions. In a pot, brown bacon, onions and egg barley.

Dust with paprika powder, deglaze with water and cook until everything is soft. Chop the chives.

Serve the hot egg barley soup with a tablespoon of sour cream and sprinkled with chives.
