For the Hush Puppies, remove the skin from the onion and dice very finely, whisk with the remaining ingredients to make a batter that is not too thick.

For the fish, cut the catfish fillet into portions. On a plate, mix corn flour with wheat flour, salt, white pepper and cayenne pepper. Turn the fish pieces in it on the other side until they are completely coated with flour.

Meanwhile, heat oil in a wide frying pan. Pour in catfish pieces and fry over medium heat for 3-4 min on each side until golden brown. Rinse lemon and leaf lettuce, dry. Cut lemon into eighths. Serve fish and doughnuts together, add lemon wedges and leaf lettuce. Serve with chili sauce.
