Instructions:

1. put the yogurt with the honey in a large enough bowl and mix until smooth.

Cut the vanilla bean in half lengthwise and scrape out the vanilla pulp with a sharp kitchen knife.

Soak the gelatine in cold water. Whip the whipped cream until stiff. Squeeze the gelatine, put it in a small saucepan, heat it with the rum and let it melt.

Stir the vanilla pulp and the dissolved gelatine into the yoghurt mixture. Fold in the whipped cream. Select the berries, rinse, clean, rub dry and add to the yogurt mixture form.

Carefully fold in and fill the mixture into a buttered baking dish.

4. compress the berry terrine by whipping it onto the surface, cover with cling film and set in the refrigerator for at least 3 hours, preferably overnight.

Divide the strawberry sauce evenly among the plates and use the sour cream to form small dots on the edge of the sauce. Run a skewer through the dabs of sour cream to make little white hearts.

Turn the terrine out of the mold, cut into slices and arrange on the strawberry sauce. Garnish each with a sprig of mint.
