For the apple shortcake, first prepare the shortcrust pastry. For the short pastry, sift the flour onto the work surface, make a well and add the egg.

Sprinkle with sugar and vanilla sugar, add butter in small pieces and knead the ingredients. Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 1 hour.

Peel, core and finely slice the apples. Mix the cinnamon and sugar and add to the apples with the breadcrumbs. Sprinkle the greased springform pan (26 cm diameter) with breadcrumbs.

Roll out 2/3 of the dough on the floured work surface to the size of the mold, place it in the mold and raise a rim. Spread the apples on the dough.

Roll out the remaining dough on the floured work surface, cut into strips and place them in a grid pattern on top of the filling. Bake in the preheated oven for approx. 45 – 50 minutes at 180 °C.

If you wish, you can now spread the cake with the smoothly stirred apricot jam.
