For the gratinated salmon with potato gratin, slice the potatoes and grind the Parmesan cheese. Mix the whipped cream, one egg, half of the parmesan, salt and pepper in a bowl.

Put the potatoes in a baking dish, pour the sauce over them and put them in the oven (220 degrees).

For the gratinated salmon, wash the salmon steaks and season with salt, pepper and citric acid. Mix the breadcrumbs, egg, garden cress, parmesan and butter in a bowl.

Chill the mixture briefly (this makes it easier to spread). Fry the salmon briefly in a pan, remove from heat and coat with the mixture. Finish the gratinated salmon with potato gratin in the oven.
