For the thick bread soup, bring beef broth to a boil with the coarsely chopped stale bread and bay leaf and simmer until the bread has broken down. Then remove the bay leaf.

Season with salt, pepper, fennel seeds and olive oil. Form grated cheese into a ball with butter and melt it in the thick bread soup. Serve hot.
