For the scalloped beets, brush the beets under running water. Cut unpeeled into 5 mm thick slices. Coat a baking dish with olive oil and sprinkle with salt and pepper.
Place the beet slices in the casserole dish. Lightly salt and pepper again. Grate or slice the cheese and spread over the beets.
Bake in the oven at 200 degrees convection for about 30 minutes until the cheese is lightly browned.
