Lentil Soup with Pork Sausages – Alsace

Instructions:

Soak the lentils: half a day in cold water.

Cut the carrot, leek, celery and onion into small pieces, fry them in hot butter and dust with flour. Add clear soup or water. Add the soaked lentils and the bacon. Add salt and pepper. Bubble for one and a half hours.

In the meantime, make the pork sausages (*) in water for fifteen minutes.

Remove the bacon from the clear soup and cut it into strips.

Drain the sausages, cut and add to the vegetable soup form with the bacon. Season to taste and bring to the table very hot.

(*) The type of pork sausages used means very little for this vegetable soup. It is enough if they are smoked.

Our tip: use a delicious spicy bacon for a delicious touch!
