For the napkin dumplings with apple lentils, first soak the bread cubes in the milk until they have absorbed all the liquid. Add the remaining ingredients, and knead briefly until the mixture holds together well. Form into a roll and wrap in one layer each of plastic wrap and aluminum foil.

Bring water to a boil in a large saucepan, place the napkin dumpling roll in and cook with the lid on for about 20 minutes.

Cook the lentils with the bay leaf in water until al dente. Then drain them.

In the meantime, peel and finely chop the onion. Sauté in a little oil until translucent. Deglaze with balsamic vinegar, add a little water and season with salt and pepper. Let it boil down. Add the lentils and stir in the applesauce. Soak the lentils if needed, cook in water with a bay leaf until soft and strain. In a saucepan, sauté chopped onion and deglaze with a little water and a good dash of balsamic – vinegar, add salt, pepper and let it boil down a little. Cut the napkin dumplings into rather thin slices and serve with the lentils. Serve the napkin dumplings with apple lentils.
