Depending on the lentils you choose, you may need to soak them overnight. For red lentils, you can skip this step.

Heat the oil in a saucepan and lightly fry the chicken breast cubes in it. Deglaze with the soup and bring to a boil, skimming off any foam. When the meat is cooked through after about 15 minutes, remove.

Add the lentils and carrots to the soup and cook until tender. This will take different amounts of time depending on the type of lentils (red lentils are ready in as little as 15 minutes, orange lentils take about 20 minutes, and brown ones take even longer). If you are using canned lentils, they can also be added in the next step.

Add leeks, bell bell pepper and ginger and simmer briefly.

Add chicken back in, bring to a boil again and season to taste with the spices.

To serve, sprinkle with freshly plucked cilantro.
