Wash the meat and bones with cold water. Bring the 5 liters of water to a boil in a large pot, put the boiled beef, bones, peppercorns, boil gently, you should expect a cooking time of 3-4 hours. Skim off the foam constantly.

Cut the onions in half, roast them in the pan on the cut surfaces until very dark. Wash, clean, peel and chop the root vegetables and leeks. 1 hour before the end of cooking, add the root vegetables, leeks, lovage and onions, continue to simmer gently.

Remove the cooked, tenderized meat from the pot, season the soup with salt and pepper, strain through a sieve. Cut the boiled beef into finger-thick slices, pour over the soup and sprinkle with sea salt and chives. It is traditionally served with roasted potatoes, apple horseradish and chive sauce, but it also goes well with dill beans, creamed spinach, lettuce with peas and pumpkin vegetables.
