Wash the fruit, remove the seeds and leave to marinate overnight with cinnamon and sugar.

The next day, cook over low heat, stirring often (it burns easily!), until most of the liquid has evaporated.

Fill the finished roaster into sterile jars and store in a cool and dark place.
