Preheat the oven to 180 °C for the mole cake. Separate the eggs. Put sugar, yolks, vanilla sugar, oil, rum and water in a bowl and mix with a mixer/food processor for a few minutes until foamy.

In another bowl, mix flour, baking powder and cocoa with a spoon and fold into the “wet” mixture. Beat egg whites in another bowl and fold in.

Pour the batter into a greased and floured springform pan and place in the oven for about 40 minutes. After that, the dough must cool, after some time remove the springform pan.

When the dough is cold, cut the top layer with a knife, leaving about 1 cm border. Then scoop out the dough with a spoon and roughly crumble the removed dough in a bowl.

Spread the hollowed out cake with jam (e.g. peach jam). Cut the bananas into slices and spread on top, sprinkle with a little lemon juice if desired. In a bowl, whip the cream with cream stiffener.

The chocolate flakes should then be lightly stirred in by hand. Spread the cream mixture over the cake in the shape of a dome. Finally, spread the crumbled dough on top and press down lightly.

Then place the cake in the refrigerator for a few hours.
