For the Habanero Hot Sauce, put the garlic in a pan and sauté for a few minutes, then add the chopped carrots, the onion pieces and the water.

Bring to a boil and then reduce to a simmer. Simmer until the carrots are soft, about 30 minutes. Add the diced habaneros, lime juice, vinegar, salt and honey to the carrot mixture.

Use a hand blender or similar to puree all ingredients. Pour the habanero hot sauce into sterilized jars and refrigerate.
