Boil the potatoes, let them steam briefly and press them through a potato press while they are still hot. Knead the potato mixture with the egg, egg yolk, flour, cornstarch, a pinch of nutmeg and salt into a smooth dough. Form into a roll on a floured work surface, divide into about 12 equal pieces and roll out into even dough discs. Finely chop the bacon, divide it among 4 pieces of dough and form them into small, round dumplings with slightly moistened hands. Also place the sausage meat on 4 pieces of dough and form into dumplings. Bring salted water to a boil and cook the dumplings in it for about 10 minutes until they rise to the surface. Arrange three differently filled dumplings on warmed plates and drizzle with brown butter.
