Instructions:

Put the plums in a little plum water (or water) and pull with the lid closed.

Brush the potatoes and cook them in lightly salted water. Drain, peel and steam the potatoes. Press the still hot potatoes through a potato press and knead them with flour, egg yolk, butter, salt and wheat semolina to a firm dough. Put some of the dough into boiling water to test it and, if the quantity does not hold well, add a little more flour. Rest the dough for a few min.

Divide the dough into portions. Put a sugar cube between two plums, cover them with dough and form a round dumpling. Continue until all the dumplings are formed.

In the meantime, boil enough water with sugar and salt in a wide saucepan. Reduce the heat, pour in the dumplings and cook for just under ten minutes.

For the butter crumbs, melt the butter in a frying pan. Add the crumbs and a little bit of sugar and brown.

Lift the dumplings out of the water with a skimmer and serve with the butter crumbs.
