Peel the apple, remove the core, then cut into quarters. Place the apple pieces in an ovenproof saucepan, add the cider and bring to the boil over medium heat. Simmer the apples in the closed saucepan over a mild heat for half an hour until they are soft.

Preheat the stove to 180 °C.

Spread the apples together with the cooking liquid over a baking dish through a sieve. Transfer the amount again to the cooking pot. Add cinnamon, vinegar and brown sugar and bake without lid in hot stove for 3 hours, stirring occasionally. Cool to room temperature and keep in refrigerator with lid on for up to 3 weeks.
