For the cream of apple soup with carrot straw, first peel the onion and apples, remove the core from the apples and roughly dice the onion and apples. Peel the potato.
Heat the soup and cook the onion and apples in it for about a quarter of an hour until soft.
In the meantime, peel the carrots and cut or slice into thin strips. Knead them with the flour. Divide into 4 nests.
Grate the potato into them. Finely puree the soup, stir in some whipping cream until the desired consistency is reached and season with salt and pepper.
Heat some oil in a pan or pot and fry the carrot nests in it until crispy.
