Fritters Liver with Apples and Onions

Remove the skin from the apples and cut out the core. Cut apples and onions into rings. Roast bacon slices until crisp and keep warm.

Heat some clarified butter, steam apple and onion slices in it until soft and keep warm as well.

Season liver with pepper and dust with flour. Heat remaining clarified butter, fry liver on both sides for 5 minutes, season with salt and arrange on a platter. Spread apple and onion rings evenly on top and place bacon slices on top.

Serve with Mashed potatoes.

Our tip: Use bacon with a fine, smoky note!
