Turkey Ragout with Apples and Celery Stalks

Instructions:

Rinse the turkey breast, dab dry and cut into 2cm cubes.

Mix with the spices and the grated zest of the lemon.

Peel apples, cut into quarters, remove core. Cut apples into narrow wedges and sprinkle with juice of one lemon. Clean celery, rinse and cut into 1/2cm thick slices.

Place clarified butter and celery in a microwave-safe dish and cover with microwave foil. Cook at 600W for 7 min.

Add turkey. Cover and cook at 600W for 5 min.

Stir in apple slices. Add cider. Cover and cook at 600W for 4 min. Stir through crème fraîche, sauce thickener and mustard and mix into turkey ragout. Continue cooking at 600 W for 6 mni. Season to taste.

Rinse thyme and pat dry. Pluck the leaves and sprinkle over the ragout.

Serve with vegetable rice.
