First boil the potatoes with the peel until soft. Drain the water and let the potatoes cool down only long enough to peel them while they are still hot.

In the meantime, finely chop the young onions and mix with a dash of vinegar, mustard, a small pinch of powdered sugar and a little water.

Peel the potatoes, cut them into 2 mm thick slices and put them immediately into the vinegar water. Season well with salt and pepper and let the potatoes steep until they are lukewarm or at room temperature.

Mix the chopped chives with the mayonnaise and stir into the potatoes.

Serve the potato salad with mayonnaise and sprinkle with chives before serving.
