For the Naked Cake with figs and goat cheese, first beat the eggs with sugar until the volume triples and the mixture has an almost white color. Sift the flour and gradually fold in together with the grated almonds. Melt the butter and let it cool slightly, also mix it into the dough.

Divide the dough into 4 to 5 parts (depending on the size of the baking pan, 14-16 cm diameter is best) and bake in the suitable baking pans covered with baking paper at 180 °C top/bottom heat for 20-25 minutes. Let the sponge bottoms cool quickly on the rack, wrap in plastic wrap and store in the fridge until the cream is ready (at least 2 hours).

For the cream, mix mascarpone with powdered sugar, then fold in the goat cream cheese. Leave to firm up in the refrigerator.

Spread the pastry base with cream and assemble the cake, put it back in the fridge for a short time.
