Stuffed Potatoes

For stuffed potatoes boil potatoes with skin in salted water for about 25 minutes.

Finely crumble toasted slices of toast, briefly hold tomatoes in boiling water, peel, seed and finely dice the flesh. Finely chop spring onions, finely dice peppers.

Mix toast crumbs with diced tomatoes, diced peppers, green onions, cheese and a beaten egg. Season with salt and pepper.

Preheat oven to 180 degrees convection. Allow potatoes to cool slightly. Cut off a lid and hollow out the potatoes to a 1 cm edge. Mash the inside of the potatoes and fold in the mixture. Fill the potatoes with the mixture, place them on a buttered baking tray and bake the stuffed potatoes in the oven for about 25 minutes.
