Cut the cookies into strips with a sharp kitchen knife (break the speculoos roughly). Sprinkle with coffee except for a little bit and let sit for about half an hour.

In the meantime, mix the mascarpone and low-fat quark with the whisk of a hand mixer, gradually adding the milk. Then season with sugar, vanillin sugar and juice of one lemon. Cover and let stand for about 15 minutes.

Fill half of the cream into the number of dessert bowls indicated above. Spread the soaked pastry strips evenly on top. Layer the remaining mascarpone cream on top.

Crumble remaining brown cake and sprinkle over the Krem. Then dust with cinnamon.
