A great cake recipe for any occasion:

1. sift flour into a suitable bowl and make a well in the center. Crumble yeast into it with the water and stir in a little flour from the edge. Dust the dampfl with flour and let it rise in a warm, draft-free place with the lid closed until the surface shows cracks.

2. later add the rest of the dough ingredients with the dough hook of the food processor to make a smooth dough. Cover and let rise in a warm place for 2 hours to double in volume

3. knead the dough briefly on the surface and divide it into three portions of the same size. Form the portions into rounds and place them on the baking sheet, flattening them slightly. Score the dough with a sharp kitchen knife and cover it with a dishcloth and let it rise for 1 hour in a warm place.

4. brush the bread with egg yolk/water and bake in a heated oven at 200 degrees for 30-35 minutes. If necessary, cover with parchment paper halfway through the baking time. Place on a cooling rack and cool. Before baking, cut the bread with a sharp kitchen knife and let it rise again.

Info: According to Provençal tradition, the Christmas bread is broken. Whoever cuts the bread with a kitchen knife will suffer bankruptcy the following year.
