Instructions:

For all recipes use plain (sifted) flour and sifted powdered sugar.

Always knead the dough well before processing so that it becomes soft and smooth.

When using almond kernels and nuts, always grind them very finely.

Tea cookies (Mailänderli) (Highly recommended) Place ingredients in a suitable bowl, knead by hand and work through. For two-colored dough, mix 1/3 of the quantity with 1 tablespoon of cocoa and 1/2 teaspoon of butter. Press any shape onto the baking sheet using the Sawa cookie machine.

When the dough is ready, press it on the baking sheet on the spot (do not rest).

The same dough can also be used to make butter S’s. After baking – while they are still hot – brush them with the following glaze: Mix powdered sugar with water until smooth, add a little juice of a lemon. (Molds no. 16.) With vanilla in glaze cook yourself vanilla/bretzeli or croissants from the same dough (molds no. 7).

Bake: 10 to 12 min in the oven heated to 200 °C. Attention: hardly let them brown, watch them well towards the end! Make family cookie mousse by mixing eggs, sugar, butter, flavoring ingredients and flour. Using the Sawa cookie machine, place any shapes on the ungreased baking sheet and bake until light.

Aniseed rolls (1) Beat eggs and sugar until creamy, add aniseed, grated lemon peel, baking powder with flour. Pour the dough with ramekins no. 10 or no. 12 onto a greased, flour-dusted baking tray.
