For the Chocolate Cookies, allow all ingredients to warm to room temperature (this is really important!) and then knead together.

The dough should rest in the refrigerator for at least 36 hours. Spread small amounts of dough (less than 1 tablespoon) on a baking sheet lined with parchment paper (the cookies will run apart, so leave enough space).

Sprinkle with a little salt and bake for about 10-15 minutes at 200 °C.
