For the wild garlic pasta, wash the wild garlic, chop it and finely strain it together with the olive oil.

Knead the flour, salt, eggs together with the strained wild garlic into a smooth dough. Divide the dough into 8-10 portions and roll out with a pasta machine until the dough sheets have the desired thickness.

Then, using the pasta attachment, cut each sheet of dough into noodles of the desired width and place on a strudel towel to dry.

Cook the pasta in enough salted water until al dente.
