To make the dough, place the flour in baking bowl, press a bulge into it and crumble the yeast into it. Pour the warmed cow’s milk over the yeast. Add salt, sugar and butter on top of the flour. Knead all ingredients together from the center to form a smooth dough. Dust the dough lightly with flour, cover with a dishcloth and let rise at room temperature for about half an hour.

For the curd mixture, put the drained curd with sugar, eggs, salt, juice of a lemon and zest in a baking bowl and whisk in the whipped cream until smooth. For the crumble, knead the properly precooled sugar, butter, flour and salt with your hands into coarse crumbs and set aside to cool.

For the glaze, put cow’s milk, sugar and salt in saucepan. Remove a little cow’s milk and stir the pudding powder with it until smooth. Bring the cow’s milk to a boil and add the pudding powder with a whisk. Allow the pudding to bubble up once while stirring. Set aside to cool. Line the juice pan of the oven with parchment paper. Pinch the dough together and roll it out on the floured surface to the size of the juice pan. Place the dough in the juice pan and press up the edges a tiny bit.
